Ingredients:
Aluminum Foil
6 Sub Rolls
1 lb Mozzarella cheese, sliced
Burgers:
4 eggs
1/2 cup olive oil
1/2 lb ground beef
1/2 lb hot Italian sausage (removed from casings)
1 loaf Italian bread (1day old soaked in milk)
1/2 cup Parmesan cheese
6 garlic cloves minced
1 cup flat leaf parsley chopped
Salt
Black pepper
Instructions:
Squeeze milk out of soaked bread and place in a large mixing bowl. Combine all ingredients with bread in bowl and mix well Refrigerate (This can be done ahead of time and taken to game/party) Roasted Red Pepper Marinara: 3 Tblsp olive oil 1 Red Bell Pepper 1tblsp Crushed red pepper flakes 1/2 cup onion diced 4 garlic cloves diced 1/2 cup flat leaf parsley chopped 1/2 tsp thyme 1 tsp oregano 1 tsp basil 1 small can tomato paste 1 large can tomato puree 1/4 cup granulated white sugar salt black pepper 1 cup water Rub 1 Tblsp olive oil on Red Bell Pepper and roast on BBQ-High heat till pepper skin turns black. Place pepper in a plastic bag for 15 minutes. Remove all skin from outside and seeds from inside. Dice In a medium sauce pan medium heat add 2 tblsp olive oil When hot add onion and garlic, stir Sautee for 5 minutes add roasted pepper,stir When veggies are cooked, add tomato paste and 1/2 cup water, stir till smooth Add tomato puree and 1/2 cup water, stir till smooth. Continue stirring until sauce starts to boil, then lower heat and simmer for 1 hour, KEEP STIRRING. Add remaining ingredients Keep stirring. Sauce will be ready after 1- 1 1/2 hours of simmering. Let sauce cool and refrigerate. (This also can be done before game/party) On Utes Game Day: Heat sauce From the meat mixture form patties to the size and shape of your rolls. About 1/2″ thick In a large sautee pan over med heat add 2 tblsp olive oil When oil is hot, place patties in pan (only 3 at a time, depending on size of pan, you can run 2 pans if your good) Cook patties 8-10 minutes then flip and cook other side for 5 minutes, to medium well Remove from pan and Place patties on paper towel to drain Turn heat to low Place aluminum foil on bottom of sautee pan cut sub rolls lengthwise and open Place pattie in bun Add 1 or 2 slices mozzarella cheese Sauce top of cheese Place sandwich in sautee pan Cover with foil When cheese has melted, ENJOY!! This may seem like alot of work, but most of it can be done ahead of time The best thing about this sandwich is that you can hold it in 1 hand, which leaves your other hand available to drink your favorite beverage!!
